PASTA BIANCO

To kick this section off we're going to start with the most basic dish to make, using the simplest sauce - Pasta Binco Means 'White pasta'. When it comes to grating your galic, i suggest you do this a grater. The slices will almost turn into a paste when you fry them. you can use any kind of pasta, but classically its made with fresh tagliatelle or taglioloni. This recipe gives you a really good fell for how cook pasta properly - you want the sauce just to coat the pasta and not to  be too claggy or sticky. If we ever have kids eating at the restaurant and they're a little fussy, they always tend to go for this, with a little bit of grated Parmesan cheese on the top.

 

This dish can also be quite luxurious, It's the key pasta dish that's made when white truffles are in season. The truffles are literally sliced oer the top - I can't think of anything nicer to have with them than really cheesy, buttery pasta.

 

           SERVES 4 

          2 or 3 handfuls of freshly grated Parmesan cheese

          Sea salt and feshly ground black pepper

 

In a small shallown pan, slowly fry the grated garlic in the butter without colouring for a couple of minutes
